Does this remove copy protection?

No. Protected or encrypted audio is not supported. Use an unprotected recording you are permitted to process.

Will converting AAC audio improve it?

No. Re-encoding AAC as MP3 is useful for compatibility, but it does not add quality. Keep the original when your player already supports it.
